National Peanut Butter Lover’s Day: Peanut Butter Banana Ice Cream

Did you know today is National Peanut Butter Lover’s Day? Peanuts are a legume native to South America. Peanut butter is a food paste made from peanuts.

Why not try celebrate by using peanut butter in your recipes? Try making this peanut butter banana ice cream sandwich.

Ingredients:

  • 2 frozen bananas, as ripe as possible
  • 2 tablespoons nondairy milk
  • 1-2 tablespoons peanut butter
  • Dash of salt
  • Handful of chocolate chips

Instructions:

In a blender, blend the bananas. You can also use a fork to mash the bananas.

Add the nondairy milk, peanut butter and salt. Blend once more.

Spread the banana mixture on one graham cracker. Top with the other graham cracker. If the banana mixture is too runny, freeze the banana mixture first.

Wrap the graham cracker sandwiches in aluminum foil. Stick in the freezer until frozen.

Unwrap the sandwich when you are ready to eat. Enjoy!
