Potato latkes are easy to make and you can make potato pancakes whether you celebrate Hanukkah or not. Try the recipe below. I also included how to substitute ingredients to make it vegan since I am a vegan. You can make them either way.
Ingredients:
- 3 potatoes
- 1 onion
- 1 egg (can omit if vegan)
- 1/4 cup flour
- 2 tablespoons vegetable oil
- Salt and pepper
- Applesauce or sour cream for serving
- Grate the potatoes and onion together.
- In a medium bowl, beat the egg. You can omit if you do not eat eggs. I am vegan so I make them without an egg.
- Add the potato, onion, flour, salt and pepper.
- Form the potato mixture in to patties. In a saucepan, heat the vegetable oil. Add the potato patties one at a time. Cook until brown, about 4 minutes. Flip and cook until brown on both sides and the potato is tender.
- Drain on paper towels. When serving, top with applesauce or sour cream if desired.
