Hanukkah Potato Latkes

I love making potato latkes during Hanukkah. Food cooked in oil is supposed to represent the oil that burned for eight days.

Potato Latkes

Potato latkes are easy to make and you can make potato pancakes whether you celebrate Hanukkah or not. Try the recipe below. I also included how to substitute ingredients to make it vegan since I am a vegan. You can make them either way.

Ingredients:

  • 3 potatoes
  • 1 onion
  • 1 egg (can omit if vegan)
  • 1/4 cup flour
  • 2 tablespoons vegetable oil
  • Salt and pepper
  • Applesauce or sour cream for serving

Instructions:

  1. Grate the potatoes and onion together.
  2. In a medium bowl, beat the egg. You can omit if you do not eat eggs. I am vegan so I make them without an egg.
  3. Add the potato, onion, flour, salt and pepper.
  4. Form the potato mixture in to patties. In a saucepan, heat the vegetable oil. Add the potato patties one at a time. Cook until brown, about 4 minutes. Flip and cook until brown on both sides and the potato is tender.
  5. Drain on paper towels. When serving, top with applesauce or sour cream if desired.
